Avocado Chips with Pico de Gallo

These crispy avocado chips are so delicious and dipable and go perfectly with our pico de gallo salsa! Satisfy your craving for a crunch with these tasty good for you chips.

Avocado Chips

(from delish.com)
2 avocados
3/4 cup of Parmesan cheese grated
1 tsp lemon juice
1/2 tsp of italian seasoning
1/2 tsp on garlic powder
salt and pepper to taste

Pico de Gallo

(recipe from Eva Longoria)
2 Tomatoes
1/2 an onion
1/2 a bush of cilantro
1 serrano pepper
1 juice of lime or 2 Tbsps
salt and pepper to taste

Instructions:

  1. Preheat oven to 325°

  2. Line  or oil a large baking sheet

  3.  In a medium bowl, mash avocado with a fork until smooth. Stir in Parmesan, lemon juice, garlic powder, and Italian seasoning. Season with salt and pepper.

  4. Place heaping teaspoon-size scoops of mixture on baking sheet, leaving about 3” apart between each scoop. Flatten each scoop to 3" wide across with the back of a spoon or measuring cup.

  5.  Bake until crisp and golden, about 30 minutes, then let cool completely. 

HELPFUL HINT:

You may need to cook your chips longer to get them crispy. Also, make sure you flatten them a lot before cooking. If they are too thick, they will not get crispy.
