Cheesy Tater Tots
These homemade tater tots with a gooey cheddar cheese center are the perfect guilty pleasure snack food to serve on game day or to accompany any meal. Recipe and video demonstration by Alyena.
Recipe
2.5 kg potatoes, peeled, par boiled and grated
½ cup plain flour
1½ tsp salt
1 tsp pepper
1 tsp dried oregano
½ tsp dried basil
1 tsp garlic powder
Oil for frying
Instructions:

Peel potatoes, boil for 10 minutes, or until almost cooked

Once potatoes are cooled, grate them either by hand or with your food processor. If there is any liquid, make sure to squeeze it all out.

Place potatoes, flour, and all spices in a bowl and gently mix them together until combined.

Cut cheese (we used cheddar, but any hard cheese will do) into bite sized pieces.

Place a little scoop of potato in your palm, press an indent and place a piece of cheese inside, then form the potato around the cheese into a tot.

It is best to place the tots in the freezer for 15 or more minutes before frying.

Place chilled tots in medium hot oil and fry until a nice golden brown. Do not over crowd the pan.

HELPFUL HINT:
Be sure to not let your oil get too hot. If it does, the tater tots will quickly turn a very dark brown, but the cheese will not have time to melt. We had to keep adjusting our oil temp to find the perfect heat because our fryer would get too hot.
