Game Day - Pesto Sandwich
Try our delicious vegetarian pesto sandwich at your next game day party or tailgater! This Veggie and Pesto Sandwich is a Super food packed with flavor!
Recipe
Pesto Recipe:
2 cups fresh basil leaves, packed
4 oz freshly grated Romano or Parmesan-Reggiano
cheese (We used Parmesan)
1/2 cup extra virgin olive oil
1/3 cup pine nuts (We used walnuts this time)
3 or more garlic cloves, minced
1/4 teaspoon salt, more to taste
1/8 teaspoon freshly ground black pepper, more to taste
Pulse everything in a food processor making sure to scrap down the sides half way through.
Sandwich Recipe:

1 french baguette, halved lengthwise and in the middle

Drizzle with olive oil and heat in the oven on 350 for 10 minutes. (This is a great time to add cheese, if you want your cheese melted.)

Spread Pesto on bread

Add cucumber, onions, bell pepper, tomatoes, arugula, cheese, and chips to sandwich.
