Summer Green Salad with Champagne Vinaigrette

This green salad with its elegant yet simple champagne vinaigrette dressing is incredibly versatile and instantly elevates any salad recipe with a fresh, bright flavor.

Salad Recipe:

3 cups of arugula
3 cups of baby kale
1/4 cup of roasted pine nuts
1/2 cup of fresh blackberries
Handful of cherry tomatoes (cut in half)
1/2 a red onion, chopped
1 avocado, chopped
4 oz of grated Parmesan

Champagne Vinaigrette Dressing:

1/4 cup champagne vinegar

1 Tbsp of honey

(You can use 2 if you prefer a sweeter dressing)

1 tsp dijoin mustard

3 to 4 cloves of garlic, minced or pressed

1/4 tsp salt

1/4 tsp pepper

1/8 tsp chilly flakes

juice of half a lemon

 

Instructions:

  1. Mix together with desired amount of dressing. Serve and ENJOY!
